The Takeda 3 Layer Santoku is a handcrafted Japanese all-purpose knife forged by Shosui Takeda, one of Japan’s most respected master blacksmiths. Based in Niimi, Okayama, Takeda is a third-generation blacksmith renowned for producing exceptionally thin, high-performance blades using traditional forging techniques. Every knife is individually handcrafted by Takeda and his small team, ensuring each piece is unique and reflects authentic Japanese craftsmanship.
The Santoku, meaning “three virtues,” is one of Japan’s most versatile kitchen knives, designed to excel at slicing, dicing and chopping vegetables, meat and fish. Its well-balanced profile, generous blade height and ultra-thin geometry allow it to glide effortlessly through ingredients with minimal resistance, making it an ideal everyday knife for both professional chefs and passionate home cooks.
At the heart of the blade is Aogami Super Steel, one of Japan’s highest-performing high-carbon steels, renowned for its exceptional edge retention, toughness and ease of sharpening. Hardened to approximately 64 ±1 HRC, the blade delivers extraordinary cutting performance while maintaining a razor-sharp edge. The hard Aogami Super core is protected by a 3-layer stainless steel clad construction, reducing maintenance while preserving the superior characteristics of high-carbon steel.
Finished with a traditional Kurouchi (black forged) finish, the blade reflects its handcrafted heritage while offering additional protection against oxidation. Its 50/50 double bevel edge makes it suitable for both right and left-handed users.
