JKC presents here our first series of hand forged 63 Layer Damascus knives with a core (cutting edge) of ATS314 High Carbon Stainless Steel. ATS314 is similar to VG10 but with a slightly higher Carbon and Cobalt content that allows the blades to be hardened by +2 degrees HRC making them possess enduring edges that are easy to maintain.
This series is made by the Ryusen Forge, a maker based in the Knife City of Echinzen and universally recognized as amongst the top 2 or 3 knife makers in Japan.
These blades are ultimately functional with a pure Japanese aesthetic and very ergonomic making them one of the best knives in their price range.

The shape is basically a small Sujihiki or slicing knife. As the name suggests it is a multi-function knife used for the preparation of vegetables and precise cutting of meat and fish. The slim profile presents a smaller area to fatty, oily, and starchy foods where a wider blade would create a stronger vacuum and ‘stick’ more to the food. Function – Multipurpose for preparing all food groups. A favourite knife of many home cooks who are uncomfortable with large blades. Normal length – 150mm Tip: This knife is also used for carving petite roasts, filleting and skinning fish as well as careful dissection of poultry without hitting bones.
