The base material of these knives is Advanced Zirconium Ceramic (Z206). Originally developed to make heat resistant, inert tiles for the Space Shuttle more than 30 years ago, the kitchen knife is one of the applications of this state-of-the-art raw material.
Z206 is a new generation of Zirconium Ceramic with limited flexibility whilst retaining all the fundamental qualities of long edge retention (at least 4 times longer than the highest grade of Steel) without any reaction with the food being cut.
Kyocera Z206 Ceramic can hold a super sharp edge for 3 to 4 years between sharpening with appropriate use; after a quick wipe with a wet cloth, remove all residual smells so you can cut absorbent foods like cheese with no smell transference; and the inert material does not react with food acids so maintains the purity of flavour – noticeable when cutting high sugar, high acid fruits like strawberries and mangoes.

The classic slicer. Long and thin, this is the best shape for the preparation of any flesh (meat or fish – cooked or raw) without bones. The slim profile presents a smaller are of contact with the flesh and thus reduces the strength of the vacuum between the blade and the food resulting in a smoother and easier cut.

Normal length – 240mm to 300mm (a few smaller 180mm and longer 330mm are available)
Tip: Whilst the 240mm or the 270mm lengths are the most popular select the longest length you are comfortable with. The longer the blade, the lesser the pressure required to cut the food and thus increase the ability to cut thinner slices. As this is one knife that is often taken to the table for carving in front of the diners, apart from the functionality, aesthetics should be an important consideration.
