The Hayate is an exclusive line of premium knives forged by Master Blacksmith Itsuo Doi. Doi employs an incredibly difficult and highly skilled technique, practiced by only the most renowned Japanese craftsmen, where a large blue carbon steel #2 billet is joined with a soft iron body at the lowest possible temperature. This remarkable method results in superior blade strength and edge retention for the Hayate knives. Carrying on the legacy of his father, Master Keijiro Doi, who retired in 2013, Itsuo Doi’s Hayate line features knives without serial numbers, instead bearing the “Itsu” kanji engraving on the blade. Each elegantly crafted knife boasts an ebony wood handle and is presented in a wooden box, along with a magnolia Saya to protect the blade.
The yanagi, a graceful, long, and thin blade originating from the Kansai (Osaka) region, is specifically designed for slicing boneless fish fillets into sashimi and sushi toppings with minimal pressure to preserve the delicate texture and flavours of the fish.
