The Pateru Aogami 2 Utility 135mm is a compact, handcrafted Japanese utility knife created to celebrate the 25th anniversary of Japanese Knife Company. Commissioned from a respected knife maker in Seki City, Japan, this exclusive series embodies the essential qualities of a premium Japanese kitchen knife—exceptional sharpness, long-lasting edge retention, ease of maintenance and understated Japanese elegance.
Forged with an Aogami #2 (Blue Paper Steel) core, the blade is clad with stainless steel, leaving only the exposed cutting edge as high-carbon steel. This construction combines the remarkable cutting performance and edge retention of Aogami steel with the practicality of a low-maintenance stainless steel exterior. Hardened to approximately 60–62 HRC, the blade delivers exceptional sharpness while remaining easy to resharpen throughout its lifetime.
The traditional Tsuchime (hammered) finish helps reduce food sticking during slicing, while the rustic Kurouchi (black forged) finish adds authentic Japanese character. Its slim, hand-ground blade provides superb cutting precision, making it ideal for trimming, slicing, peeling and preparing smaller fruits, vegetables and herbs.
The knife is fitted with a smooth octagonal pakkawood handle, designed for excellent balance, comfort and control. Finished with a numbered end cap, the handle complements the knife’s elegant Bunka-inspired profile and reflects the thoughtful craftsmanship behind the Pateru collection.

The shape is basically a small Sujihiki or slicing knife. As the name suggests it is a multi-function knife used for the preparation of vegetables and precise cutting of meat and fish. The slim profile presents a smaller area to fatty, oily, and starchy foods where a wider blade would create a stronger vacuum and ‘stick’ more to the food.
