Created to commemorate the 25th anniversary of Japanese Knife Company, the Pateru Aogami 2 Sujihiki 225mm is crafted in Seki City, Japan, by a highly respected knife maker. Designed to showcase the qualities of a truly exceptional Japanese kitchen knife, it combines remarkable sharpness, long-lasting edge retention, and straightforward maintenance with understated Japanese aesthetics.
The blade features a hard Aogami No.2 carbon steel core clad between layers of softer stainless steel. This construction leaves only a narrow exposed edge of high-carbon steel, reducing maintenance whilst retaining the outstanding cutting performance that Aogami steel is renowned for. The hammered Tsuchime finish helps reduce food sticking during slicing, whilst the traditional Kurouchi finish adds character and authenticity.
Hand ground and honed for exceptional out-of-the-box sharpness, the Sujihiki profile is ideal for slicing meat, fish, poultry, and large cuts with precision. The knife is completed with a seamless octagonal pakkawood handle, offering excellent comfort, balance, and durability.
PLEASE NOTE THESE ARE VERY HIGH-CARBON KNIVES WITH AN EDGE THAT WILL OXIDISE WHICH CAN BE REDUCED AND REMOVED WITH THE USE OF RUST-REMOVING CREAM AND CAMELIA OIL WHICH ARE AVAILABLE IN OUR MAINTENANCE SECTION.
