The IKKAKU Petty Knife is a versatile Japanese utility knife designed for precise everyday preparation. Manufactured by Shimizu Hamono in Seki, Japan, it combines dependable Japanese craftsmanship with a durable, low-maintenance construction suited to both professional kitchens and home cooking.
Available with a 120mm or 150mm blade, the Petty sits between a compact paring knife and a full-sized chef’s knife. Its slim profile provides excellent control for peeling, trimming, portioning fruit, preparing vegetables, slicing small cuts of boneless meat and completing delicate detail work. The 120mm model offers greater manoeuvrability, while the 150mm version provides additional reach for slicing and general utility tasks.
The blade is crafted from Japanese AUS-8 high-carbon stainless steel, produced by the respected Aichi Steel Corporation. AUS-8 offers a well-balanced combination of sharpness, toughness, corrosion resistance and ease of sharpening. Hardened to 58–59 HRC, the monosteel blade retains a dependable edge while remaining resilient enough for frequent use in demanding kitchen environments.
An ergonomic Western-style POM handle provides a comfortable, secure grip. Highly resistant to water, grease and everyday wear, it offers excellent durability and hygiene while maintaining the knife’s lightweight, agile feel.
