Hatsukokoro knives originate from the town of Tosa in Shikoku Prefecture. They are hand-forged using a three-layer (sanmai) steel construction, with a core made from High Carbon Blue 2 Steel (containing 1.05-1.15% carbon).
The High Carbon core includes only minimal amounts of chrome (0.2-0.5%), making it exceptionally easy to sharpen to a razor-sharp edge. It retains its sharpness for an extended period, while the soft iron cladding on the outer layers ensures the blade remains easy to grind over time. As this blade will naturally oxidize, it is n recommended to apply Tsubaki Oil (available at JKC) to minimize this.
The knife’s out-of-the-box sharpness is remarkable, thanks to expert hand-grinding and sharpening by some of Japan’s finest artisans. Its traditional Japanese design is enhanced by the elegant simplicity of a mono-ebony octagonal wooden handle.
Measurements may vary as each knife is individually hand-forged. The color and grain pattern of the handle may change depending on the nature of the piece of wood used.
Please Note: The handle color varies from light to quite deep ochre. Not dishwasher safe.
