Sukenari, run by the third generation of the blood, was founded by Master Hanaki Toukichi after apprenticing with the famed Masamoto. The knives are totally hand forged, ground and sharpened by a small workshop in Toyama prefecture by master blacksmith Hanaki San. The Damascus is multi-Layer Steel. The core is ZDP 189. The layers on either side are a bilaminate of Nickle steel and SUS405.
The Hardness is 66 HRC. The knife is relatively easy to sharpen for a knife of this hardness because it is Damascus, and the core is very thin. Edge retention is the best of ANY Multilayer blade that we have tested. The second is a three-layer steel with a core of ZDP189 and the outer, softer layer is SUS405. The reason for cladding the ZDP189 is to protect the ultrahard core and makes sharpening easier as the softer outer remove faster on an abrasive surface like a good water stone. The hardness is the same 66 HRC but the core is thicker so the knife will stay sharper longer than the Damascus but is harder to sharpen.
Please Note: The handle colour varies from light to quite deep ochre.
Maintenance:
- Avoid chopping hard ingredients such as bones, frozen food, or any rock-solid items.
- Using soap/washing up liquid to clean and wipe with a sponge. Not dishwasher safe.
