The Yoshida Hakushin 170mm Nakiri is a traditional Japanese vegetable knife, handcrafted by Yoshida Hamono in Saga, Japan—one of the country’s most respected centres of blade making. Designed specifically for precision vegetable preparation, the Nakiri features a straight-edge profile that delivers clean, effortless cuts while preserving the texture and freshness of ingredients.
At its core is Shirogami (White Paper Steel), one of Japan’s purest high-carbon steels, renowned for its ability to achieve an exceptionally keen edge. Hardened to approximately 63 ±1 HRC, the blade offers outstanding sharpness, excellent edge retention and exceptional responsiveness when sharpening, making it a favourite among professional chefs and passionate home cooks alike.
The blade is constructed using a traditional San Mai (three-layer) design, with a hard Shirogami core clad in softer outer layers to improve durability and reduce the risk of chipping while maintaining remarkable cutting performance. Finished in a classic Kurouchi black-forged finish, each knife displays its own unique character while offering added protection against oxidation.
Completing the knife is a traditional D-shaped Zelkova (Keyaki) wood handle, providing a secure, comfortable grip and excellent balance during extended use. As a natural material, each handle features unique variations in colour and grain, ensuring every knife is one of a kind.
Combining traditional Japanese craftsmanship with exceptional cutting performance, the Yoshida Hakushin 170mm Nakiri is an outstanding choice for precise vegetable preparation and everyday kitchen use.
