Made in Japan by Tojiro—one of the world’s most respected commercial knife makers—this series blends the best of Japanese and Western design. It pairs the blade profile of a Western kitchen knife with the traditional wooden handle of a Japanese knife.
The core steel is VG10, a high-carbon stainless “super steel” renowned for its ability to hold an exceptionally sharp and enduring edge. It is clad in soft stainless 13-chrome steel, making the blade both durable and easy to sharpen. With symmetrical, double-sided grinding, these knives are perfectly suited for both right- and left-handed users.
The blade features a smooth cutting edge, Asian sharpening angle, and a refined satin finish. Each handle varies naturally in colour—from light to deep ochre—adding to the knife’s authentic, handcrafted appearance. Lightweight, perfectly balanced, and designed for precision work, this petty knife excels at peeling, trimming, slicing herbs, cutting small vegetables, and handling delicate tasks with absolute control.

Care:
- Avoid chopping hard ingredients such as bones, frozen food, or any rock-solid items.
- Not dishwasher safe! It is best to rinse your knife with clean water immediately after use, then clean and dry it.
- Using soap/washing up liquid to clean and wipe with a sponge.
- These knives can be easily sharpened with an M150 Water Wheel, a fine diamond steel, or a whetstone with 4000 grit or less (found in the Sharpening Accessories section). Please do not hesitate to contact our sharpeners in-store if you need any additional information about sharpening.
