The Hayate series, exclusively hand-forged in Sakai, Japan by Master Blacksmith Itsuo Doi, represents the pinnacle of Japanese knifemaking tradition. Crafted from premium Yasuki Aogami #2 steel and hardened to 64±1 HRC, each blade is constructed with a threelayer composition: a blue carbon steel core expertly joined to a soft iron body at the lowest temperature possible—a rare and demanding technique practised only by the most skilled craftsmen. The result is a double-bevelled, half-tang knife of remarkable sharpness, exceptional edge retention, and perfect balance. Weighing under 150g, the Hayate feels almost weightless in the hand, yet delivers extraordinary cutting precision. The blade is hand-ground using the Hon-Kasumi-Togi method, with a mirror-polished front, back, and ago (back edge), bearing both the Suisin stamp and the signature kanji engraving of Master Doi. Its octagonal WA magnolia handle, paired with a dark buffalo horn ferrule, offers a comfortable grip and understated elegance, with natural variations in the horn adding to its individuality.
