The knives of the EXKLUSIV C90 series are the entry into the Nesmuk EXKLUSIV world of hand-forged Damascus steel. The slicer blade consists of 230 layers and has a hardness of 62 HRC. Like all Nesmuk Damascus knives, they are also manufactured in the company’s own forge. The best tool steels with high carbon content and rare metals such as tungsten, create blades with the finest sharpness and a longer service life. Unlike the EXKLUSIV C100 and C150 series, the blades are machine ground. The 260mm blade is 2mm thick, 410mm long in total, and completely hand-forged.
The handmade Damascus steel is superior in punko cutting ability and sharpness to the knives of the SOUL and JANUS series made of patented niobium steel. Many steps are involved in the production of a Nesmuk EXKLUSIV C90 Slicer – a knife that can only be created in the hands of a master blacksmith. The faceted blade with a flat grind ensures reduced adhesion to the material to be sliced and is ideal for filleting due to its slim silhouette. Carbon content: 0.9%. From fire welding and forging, hardening, tempering and grinding the hollow grind to assembling the handle. The production of a Nesmuk EXKLUSIV knife takes almost four dozen steps. The result is exceptional sharpness.
Thanks to the glass-like NPC coating (Nesmuk Protective Coating) developed together with the Fraunhofer Institute for Chemical Technology, the Nesmuk EXKLUSIV blades are protected against corrosion. The cutting bevel of the blade is not coated. Therefore, you should always clean your Nesmuk EXKLUSIV knife after use. Clean the blade with detergent and under running water, dry well afterwards. For all fine work, such as paring meat, filleting fish, vegetables and fruit.
120 layers of Damascus steel, 260 mm blade length , 62 HRC – a masterpiece! The long Nesmuk Slicer is the perfect knife for big tasks during preparation. With a blade length of 26 cm, the Damascus knife is ultra-light and ideally suited for long and precise cuts. Weighing only about 130 g, depending on the handle material, the EXKLUSIV C90 chef’s knife is the lightest knife in the collection. This makes filleting large fish and cutting wafer-thin slices child’s play. Ergonomic and solid handles for fatigue-free work: The design of the Nesmuk handle is as aesthetic as it is practical. For the wooden handles, Nesmuk uses only the best, often hand-picked pieces of exquisite quality. With wood as a naturally grown material, each handle is unique due to its individual grain, colour shades and inclusions.
Included: Matte black wooden box, certificate of authenticity.
