The JKC Aogami Paring/Petty 90mm is a handcrafted Japanese utility knife designed for precision work and intricate food preparation. Forged with a premium Aogami No.2 (Blue Steel #2) carbon steel core, it delivers outstanding sharpness, excellent edge retention, and easy resharpening.
Enhanced with chromium and tungsten, Aogami No.2 offers an excellent balance of hardness, toughness, and durability. The blade is constructed using traditional 3-layer San Mai construction, combining a hard cutting core with softer outer layers to improve strength and ease of maintenance.
Finished with a handcrafted Bubinga wood Wa handle, each knife is individually made in Japan. Natural variations in the wood grain and colour ensure every knife is unique. Compact, lightweight, and highly versatile, this knife is perfect for peeling, trimming, slicing fruit, preparing herbs, and other precision kitchen tasks.
