Sukenari, run by the third generation of the blood, was founded by Master Hanaki Toukichi after apprenticing with the famed Masamoto. The knives are totally hand forged, ground and sharpened by a small workshop in Toyama prefecture by master blacksmith Hanaki San. The ZDP 189 is a type of steel that functionality, cream of the crop as regards what one desires in a kitchen knife: the best steel, a multipurpose profile, excel functionality, and a simplistic look.
In recent years, along with traditional Japanese steel such as Shirogami and Aogami, technologically advanced tool steel has emerged. The ZDP 189 considerably improves the properties of the final product as regards hardness and the ratio of carbon to chromium, which results in maintaining the durability of the sharpness as well as limiting blade corrosion.
This blade is hardened to 66+/- HRC, making it the hardest knife we sell!
Please Note: The handle colour varies from light to quite deep ochre.
Maintenance:
- Avoid chopping hard ingredients such as bones, frozen food, or any rock-solid items.
- Using soap/washing up liquid to clean and wipe with a sponge. Not dishwasher safe.
