Ross Fortune (verified owner) –
This is my go to knife for chicken butchery and meats with smaller bones (lamb chops, etc). Its durable and low maintenance but holds a wicked sharp edge. I find Tojiro the best combination for price, quality and durability in this range (vs Kai Shun for example which I find a bit more brittle for this purpose). I prefer this stainless steel construction for clean up as this knife is more commonly used with raw meat and needs a tougher scrubbing after. In comparison a carbon steel finish will wear down quicker and require a bit more TLC with camelia oil post cleaning to avoid corrosion. The carbon steel counterparts are also more brittle which you don’t want when working around or on any bones or harder product. In my opinion the Tojiro DP line is one of the best options for a honesuki out there from a home chef to a commercial operation.
Recommend this and a Nikiri for vegetables and chopping for any chef ready to expand their set beyond the standard chefs knife shapes (Gyuto, Santoku, Petty, etc).
