Tojiro Knives have long been considered some of the best Japanese Kitchen Knives in both aesthetics and functionality and the Sakuya Series is no different. The core is constructed from V Gold No. 10, a high carbon steel that delivers both hardness and durability, ensuring long lasting sharpness retention. VG10 is also rust resistant and easy to resharpen making it suitable for a wide range of users both beginners and professionals. The outer layers of the knife are made up of both high and low carbon stainless steel, which is even more rust resistant, and is treated with electrolytic colouring technology. This allows the steel of the knife to be altered without using additional coatings and paints. The oxide film has been fine-tuned to reflect a beautiful rich black colour, effortlessly highlighting the 63 layer Damascus finish. The ebony octagonal handle adds to the knife’s beauty while also being hard and durable as it is made using a double structure.
Please Note: The handle colour varies from light to quite deep ochre. Not dishwasher safe.
Maintenance:
• Avoid chopping hard ingredients such as bones, frozen food, or any rock-solid items.
• These knives are quite easy to sharpen on an M150 Water Wheel, fine diamond steel, and up to 4000 or below
grit whetstone (available in the Sharpening accessories section).
