The TOGASHI HONYAKI knife embodies the finest traditions of Japanese blade-making, forged in Sakai City, Osaka Prefecture, by the renowned master blacksmith Kenji Togashi. At its heart lies a core of Shirogami #1 (White Paper No. 1) steel, celebrated for its exceptional purity and ability to achieve a razor-sharp, enduring edge. Forged without side wood and finished by hand on a wooden whetstone, each blade is meticulously shaped into a sword-profile chef’s knife, offering the perfect balance of cutting performance and control. The double-edged design ensures versatility for both right- and left-handed chefs. At the same time, the elegant ebony octagonal handle, paired with an artificial ivory ferrule (made from Corian), provides a refined grip with timeless aesthetic appeal. These knives are a testament to the skill, heritage, and precision of Japanese blacksmithing, crafted for discerning chefs who demand nothing but the best.
