Demand now far outstrips the production ability of the original blacksmith forging these handmade knives – we have found a small family run workshop in Sanjo City capable of producing the knives to the same exacting standards under the precise eyes of Kitano San.
The central core of these hand forged 17-layer Damascus blades is VG10, a stainless super steel, allowing long edge retention and exceptionally silky keen sharpness. With a little care and attention, the breath-taking sharpness can be easily maintained. The hand hammered finish (Tsuchime) is not only eye catching but also provides a non-stick effect like the Granton hollows that are becoming increasingly popular.
This stunning eight-piece collection epitomizes the Japanese genius for applying their ancient and increasingly rare skills to the creation of blades which fulfil the many demands of busy Western professionals as well as possessing a familiar comfortable feel.
The three-rivet handle is crafted from Pakkawood that resists water damage; however, these knives are NOT dishwasher safe.
