The Hasegawa Hangiri Bowl is a modern, hygienic alternative to a traditional wooden sushi rice mixing tub. Designed and manufactured in Japan by Hasegawa Corporation, it is made from lightweight polyethylene foamed resin and provides the broad, shallow shape required for evenly mixing, seasoning and cooling freshly cooked sushi rice.
Its smooth, low-adhesion surface helps prevent rice from sticking as it is gently folded with sushi vinegar. The resin contains an antibacterial agent that helps suppress fungal growth, while the non-wooden construction eliminates concerns such as loose wood fragments, black mould, shrinking timber or outer bands becoming detached over time.
Despite its substantial size, the foamed internal construction keeps the bowl comparatively lightweight and easy to handle. It is also far easier to clean and sterilise than a traditional wooden Hangiri, making it particularly suitable for restaurants, catering kitchens and frequent home use.
The bowl is dishwasher safe, bleach safe and heat resistant up to 90°C, allowing thorough cleaning between uses. Available in 48cm, 60cm and 72cm sizes, it accommodates everything from smaller household quantities to large-scale professional sushi preparation.
