Description

Tempura pan with fitted draining rack. Available in sizes 20cm and 24cm

This product can be used with the following heat sources Induction, Sheathed heater stoves, Halogen cooktops (ceramic hobs), Electric Sold Plate Hobs, Radiant Hobs, and gas stoves To ensure a long life of your cookware and a pleasant experience, please read this information before use. These instructions are for your general safety, for proper product use and care as well as prevent personal injury and damage to your cookware or property.

Natural wooden handle  care instruction

  • Please clean the handle by wiping with a lightly damp cloth
  • The wooden material can shrink due to temperature differences. Please retighten the handle screw if it is loose.
  • DO NOT PUT IN DISHWASHER

Before you use

A clear lacquer coating has been applied to the surface to prevent rusting until first use. When using for the first time please follow the “Guide for removing the coating (with gas stove)” or “How to remove the coating without gas stove”.

Guide for removing the coating (with gas stove)

Please use the highest heat and oven gloves at all times

  1. Wipe and clean the inside of your pan with a damp cloth.
  1. Place the empty pan on the highest heat. The colour gradually changes from black to grey where the flame hits. Please continue heating the empty pan until the whole pan changes colour. Tilt the pan little by little to ensure that the flame strikes where the colour has still not changed. Please work in the well-ventilated room whilst you do this process.
  1. When the pot has cooled down, wash it with a scrubbing sponge and remove the burnt coating. Do not leave it wet otherwise the pan will rust.
  1. After drying the pan thoroughly, put it on high heat once again. Heat about 2 cm of cooking oil and fry some vegetable scraps and heat them through until your pan absorbs some oil.
  1. Wipe off the excess oil and burnt food with paper towels.

*You cannot use this method on electric or induction hobs. Please see “How to remove the coating without gas stove” *The coating is not harmful to your body

How to remove the coating without gas stove

  1. Scrub off the coating on the outside of your pan with a scourer etc. If the water does not repel anymore, that means the coating has been removed.
  1. Put enough water in the pan up to 70% of the side and bring to a boil for 5 minutes. Check that the inside of your pan is no longer shiny. This means the coating has been removed completely. (Do not leave it wet as it creates some rust)
  1. Clean your pan well and wipe it dry, and then put it on the hob. Put a large amount of cooking oil and vegetable scraps and fry them thoroughly to allow your pan to absorb some oil.
  1. Wipe off excess oil and any burnt food with a paper towel.

*When stir-frying vegetable scraps, or using for the first time, it may create some odd smell from the burnt coating. This is not harmful to your body but please ventilate the room well. The smell will disappear as you use the pan

CAUTION:

Never leave cookware unattended while in use. In normal use do not subject the pan to excessive heat when empty as the wooden handle can be damaged

  • Please check if there is any damage or your pan is deformed and the handle is steady before use.
  • Do not put any oil when the pan is wet. This may create hot splatters or popping and can cause injury or burns
  • Do not leave your pan empty on the heat.
  • When using a gas hob, please ensure that the flame does not go beyond the pan’s bottom surface resulting in fire damage to the handle.
  • Do not put excessive amount of oil into your pan
  • Do not heat oil up over 200 ℃
  • Clean any spilt oil immediately and put the pan back on the hob
  • Ensure the pan is always steady on the hob
  • Avoid sudden temperature changes, e.g. dunking into or pouring cold water whilst the pan is still very hot, which can cause distortion or breakage.
  • Do not use the pan for storing cooked food, as any liquid may cause corrosion.
  • When you cook some high acid or alkaline food, it may cause some blackening of the surface. This does not affect the pan’s performance and it is safe to use.
  • Do not use a shallow pan for deep-frying.
  • This product is NOT dishwasher safe

To get the best result out of Carbon Steel pans

We recommended re-seasoning every time the pan is cleaned with detergent

  1. Warm up your pan
  2. Pour a larger amount of cooking oil than usual, spread evenly around the pan. Do not heat up the oil too high as it may cause a fire
  3. Put the oil into a separate container to store (or throw away)
  4. Add any amount of oil you may need and continue cooking

How to maintain

  • Use sponges or natural fibre pot brushes with some hot water whilst the pan is still warm, but NOT scalding hot. No need to use any detergent for everyday use as it removes oil from the pan – see above
  • Dry IMMEDIATELY after washing and apply a little oil before storing
  • Never use Chlorinated detergent
  • When your pan gets rusty, use some rust remover cream and scrub off with sponges wash and re-season.
