Hand forged by master blacksmiths of the Satake Forge in Seki City. This collection has a two-layer steel – Super Aogami for the hard side and a soft Iron Steel for the soft side. It is the most accessibly priced range of traditional (single bevel) Super Aogami knives we sell. Capable of holding the keenest edge for long periods of time whilst still relatively easy to resharpen, these knives are designed for the most demanding professional kitchen. A Walnut handle with a plastic ferrule completes the knives of this collection.
