The rough side (vitrified) has 220 grits. Perfect for those that need the aggression of the 220 grit for occasional establishing of a new edge or for those that sharpen both western and Japanese knives regularly. The Naniwa (Lobster Brand) 3000 Grit sharpening stone (210x65x20mm). At 20mm height this stone is slightly shorter than the other (Lobster 220 & 1000) naniwa Waterstones. This 3000 Grit stone has a very smooth texture and is intended for polishing a knife for cutting proteins. This is a Waterstone so it will need to soak for a minute or two before use.
