The rough side (vitrified) has 220 grits. Perfect for those that need the aggression of the 220 grit for occasional establishing of a new edge or for those that sharpen both western and Japanese knives regularly. Remember the 220grit side is not for everyday use and will wear faster. Model Characteristics Stone construction - 220 grains per sq. cm. Cleaning - NOT RECOMMENDED for Dishwasher. Hand wash with toothbrush - mild detergent. Maintenance - Occasional light sanding with fine sand paper to achieve a flat surface. Lobster 3000 Grit Fine Stone
The Naniwa (Lobster Brand) 3000 Grit sharpening stone (210x65x20mm). At 20mm height this stone is slightly shorter than the other (Lobster 220 & 1000) naniwa Waterstones. This 3000 Grit stone has a very smooth texture and is intended for polishing a knife for cutting proteins. This is a Waterstone so it will need to soak for a minute or two before use.

VG-10 three-layer steel: The three-layer steel is easy to sharpen, VG10 steel material is loved by professional chefs. Molybdenum, Vanadium, and Cobalt, which enhance the longevity of the sharpness.
The craftsmen of Tsubame-Sanjo create a hamaguri-shaped edge (a blade with a cross-section that resembles a clam) using the traditional Sharpening method. The gentle curve of the edge reduces the resistance when cutting into food. Its excellent sharpness provides a smooth cut.
