This knife was forged by Doi Keijiro, second generation Doi blacksmith and father of current third generation Doi Itsuo. He was well known for his work in Hitachi Blue 2 steel and specialized in Usumono, meaning all kinds of thin knives from Fuguhiki to Funayuki Deba. When he retired about ten years ago his remaining work gained in popularity and is now in the hands of chefs and collectors around the world. This Fuguhiki is some of his late work from our vaults. It comes with special hand engraving and a purple heart handle. The purple colour is natural and caused by the tree sap reacting with oxygen and UV radiation.

THAT WILL OXIDISE WHICH CAN BE REDUCED AND REMOVED WITH THE USE OF RUSTREMOVING CREAM AND CAMELIA OIL WHICH ARE AVAILABLE IN OUR MAINTENANCE SECTION.
