Description

The Kiritsuke yanagi knife is a specialized Japanese blade meticulously crafted for preparing sashimi and sushi toppings from boneless fish fillets. Its slender, graceful shape allows for elegant, precise cuts in one fluid drawing motion. Originating from the Kansai region’s traditional Kengata yanagi style, these exquisite knives are the work of renowned blacksmith Kenji Togashi. Forged from premium carbon steel blue #2, the blade possesses a stunning hongasumi hazy finish but requires special care to prevent rust and discoloration from moisture and acidic foods. The yanagi’s single-beveled edge is complemented by an ebony octagonal handle accented with white buffalo horn for a sophisticated grip.

The magnolia wood Saya sheath protects the razor-sharp blade when not in use. Togashi’s mastery is evident in the knife’s incredible hardness of 64 on the Rockwell C scale, ensuring remarkable edge retention. Whether slicing delicate sashimi or expertly garnishing nigiri, the yanagi elevates the art of Japanese culinary knife craft to sublime levels through its peerless performance and timeless aesthetic.
