The PATERU 17 Layer Collection, introduced by the renowned Japanese knife company Pateru, stands out as one of the best-selling variants among Japanese knives. This exceptional collection boasts blades crafted with both Damascus and Tsuchime techniques, incorporating 17 layers of VG10 (N10) steel. The handle features a distinctive Burnt Oak Octagonal Wood design and is skillfully made in Sakai city, Japan, while the blades are expertly forged by sharpeners in Seki city. These knives exhibit exceptional durability. The hand-hammered surface of the blades serves not only an aesthetic purpose but also enhances their practicality. This unique pattern, resulting from the hand-hammering process, contributes to an even edge, making re-sharpening a breeze. Furthermore, the random hollows along the body of the blade function similarly to ‘Granton’ indentations, ensuring that ingredients easily fall away as you slice. Bearing the unique blade marking “刃鎚流作 / PATERU,” which is meticulously hand engraved. Maintenance:
• Avoid chopping hard ingredients such as bones, frozen food, or any rock-solid items.
• Using soap/washing up liquid to clean and wipe with a sponge. Not dishwasher safe.
• These knives are quite easy to sharpen on an M150 Water Wheel, fine diamond steel, and up to 4000 or below grit
whetstone (available in the Sharpening accessories section).
