Forged in Seki City from a High Carbon Molybdenum Vanadium Stainless Steel, the blade is treated with a Black Sumitomo Inert coating that gives the knives a unique appearance. The handles are crafted from a Hardwood from the Birch family. Please note that the black coating will wear over a period of time to expose the stainless-steel blade. Utility: The shape is basically a small Sujihiki or slicing knife. As the name suggests it is a multi-function knife used for the preparation of vegetables and precise cutting of meat and fish.
