This very compact series of 3 knives that meets the needs of most users is Hand Forged from a 37 Layer of steel with a High Carbon VG10 Core by a small forge in the outskirts of Sakai City. These super smooth knives are finished to the very highest standards and would satisfy the most demanding cook. Equally at home in either a busy professional or home kitchen.
The long-lasting surgically sharp edges are easy to maintain. The handles are made of laminated hardwood that is injected with a polymer resin for durability and comfort. Outstanding balance, performance and aesthetic are the prime virtues of these fabulous knives.
The edge of this shape is almost flat for the entire length and is the consummate knife for the preparation of vegetables. The wide rectangular blade is ideal for scooping and the best shape for vertical chopping of hard and dense foods like cabbages, celeriac etc.

Normal length – 160mm to 180mm
Tip: A few models have a completely flat edge with no curve so if you need to roll cut as well as vertically chop (to Julienne or Chiffonade herbs) select a model that has a slight curve towards the tip. This is the ‘uber’ knife for vegetables.
