Oriental cuisine is becoming increasingly popular in both the domestic and the commercial kitchens of Western Europe. The Japanese influence is particularly fashionable and highly regarded. Most well-known cookery writers now include several recipes for Japanese dishes. I have included my own recipes as well as those from acclaimed chefs who have contributed to this section.

Japanese cuisine relies on the freshest fine quality ingredients, simply cooked and beautifully presented.

I hope you enjoy these recipes, some of which are inspired by my experience working in an Izikaya (traditional Japanese eatery) and others on my time in Japan but using more easily available ingredients and tailored to the European palate.
